Bar Tozino, Maltby Street

LLopart Rose Cava now at Bar Tozino!

Walking in to Bar Tozino is like stepping into a Jamóneria in Spain!  Jamón is hanging from every inch of the ceiling, the walks are dark wood, the light is dim and guys carving the Jamón on the bar are talking to each other in Spanish.

The golden goodness of Sherries is nestling into the wine racks and relaxed punters are watching the art of carving whilst sipping their Spanish wines or beers. As of last weekend the new beverage of choice is the unique Llopart Rosé Cava. The organic producers of this award-winning Cava have been around since 1887. From the early 1950s on, the family devoted their efforts into craft elaboration methods to ensure their Cava’s are of the highest quality. Also called “champenoise”, this technique follows strict guidelines of sparkling wine production, which result in unique and expressive products. The estate is around 60 hectares of vineyard at 340m above sea level and stretches across a hill with many slopes. The rich soil and excellent conditions allow the Llopart estate to be organic with outstanding value wines.

According to Chuse, the owner of Bar Tozino, the elegant structure of bubbles and the fruity aromas bring out the savoury umami flavours in the Jamón, which complements it perfectly. Also the well balanced acidity cuts through the gentle fats of his Pata Negra Iberico meats. Basically, it’s a match made in heaven.

And if this isn’t mouth-watering enough, here’s the Cava’s tasting note: “Very bright cherry–pink colour. Well-developed bubbles, constant and small in size. Fruity exuberant aroma dominated by a variety of forest fruits along with delicate tannins. An initially potent flavor with good structure and just the right degree of acidity that maintains a perfect balance throughout its prolonged lingering aftertaste.”

¡Salud!
